I came across this recipe that I think is brilliant! It’s like an egg-in-a-hole, but without the bread and extra carbs. It’s a better choice for more and more people who choose to eat less carbs or are have gluten-free diets.
The possibilities are endless, you could add just about anything you want to dress up this dish. Either way it’s a pretty fast and delicious dish. I hope you enjoy!
1 Red Pepper
Using a large nonstick frying pan, place on medium heat
Wash and cut pepper horizontal 1/4 inch in thickness.
Place pepper in a frying pan, hold down to create a seal
Crack egg into the center of each pepper,
Sprinkle Pepper, Salt Chives and Cheese on the top of each
Cook for approximately 2-3 minutes
