A great change from chocolate for Valentine’s Day, I figured there isn’t a time to post this beautiful and healthy red beet chip recipe.
In the past I have never been a huge fan of beets, however this recipe surprised me. They were delicious and was very similar to eating home style potato chips. In the event of Valentine’s Day give this recipe a try and keep the love going, stay healthy!
1 tbsp extra virgin olive oil
Preheat oven to 350 degrees, with racks in upper and lower thirds also dont forget to always wash your vegetables.
Slice 1/16 inch thick with a mandolin.
In a large bowl, toss with extra-virgin olive oil and sprinkle with salt.
Using two non-stick baking sheets (or use one sheet and bake in two batches), arrange slices in a single layer.
Bake until edges begin to dry out, about 20 minutes. Uncover and rotate your baking sheets. Continue baking 10 to 20 minutes, removing when chips become lightened in color.
Transfer to a wire rack; chips will crisp up as they cool.
